Raw chocolate, unlike traditional chocolate is made from unroasted cocoa beans; as a result, chocolate is obtained with much less bitterness. A raw chocolate with 90 % cocoa will be much softer and pleasing on the palate than a traditional 90% chocolate. Raw chocolate manufacturing process also gives it a creamier texture than roasted chocolate.
Since cocoa beans do not undergo high temperature heat treatment, they retain more of their antioxidant properties beneficial to health. We can say that raw chocolate, with its many advantages, has nothing to envy to traditional chocolate.
